Domaine Leflaive and Domaine Bizot produce some of the greatest wines and were not only intrigued to taste Paris Sigalas’s bottles but visit him — so we arranged it.

A trio of titans came together to enjoy great wines, what an accolade for Greece’s finest winemaker!

 

One of the islands most respected producers, Paris Sigalas started OENO Π in the kanava of his family — the traditional wine cellar in a sea-facing cave near the underwater Kolumbo volcano in Baxedes-Oia. It was here that he founded Domaine Sigalas in 1991 — first nurturing the indigenous Assyrtiko grapes on the volcanic soils, to opening a bottling plant 7 years later, to today with this new project, continuing his research and perfecting traditional and new techniques to release the potential of this unique landscape that has been at the heart of Greek wine production for 3,000 years.

His new releases represent what he calls ‘the new nykteri’, forgoing aging in oak in favour of up to 2 years in clay amphora, imparting a stoney minerality that Master of Wines Greg Sherwood notes “perfectly expresses the uniqueness of Santorini’s volcanic terroir”. To Paris Sigalas, tradition is not an anchor but a rudder, and one that he is using to steer OENO Π into bold new territory. By blending the old ways with new thinking, he is creating world class wines that truly are preserving that fire — driven to elevate Santorini’s wines to be the best they can be, rather than a reproduction of what they have always been.
