It was here that he founded Domaine Sigalas in 1991 — first nurturing the indigenous Assyrtiko grapes on the volcanic soils, to opening a bottling plant 7 years later, to today with this new project, continuing his research and perfecting traditional and new techniques to release the potential of this unique landscape that has been at the heart of Greek wine production for 3,000 years.

“It is a fact that nowadays scientific research and the technologies it generates have significantly improved the quality of wine” he says. “Yet… science cannot distinguish a great wine from an average one. It was this elusive element, this potential miracle, that was the trigger for me to create Domaine Sigalas 30 years ago. And it is still the inspiration for my new adventure, OENO Π.”
